General Manager, Hotel, £80,000 OTE

We are currently looking for an experienced and confident General Manager to lead a high-quality hotel that offers boutique rooms alongside a reputable restaurant.  


This is a fantastic opportunity for someone with a strong background in fine dining or premium restaurant management who understands both exceptional service and strong commercial performance.  


The package offers up to £80,000 OTE, including performance-related bonus, plus generous tips — making it a genuinely rewarding role for the right person.  


The Role  

You will have full accountability for the overall performance of the business, overseeing both Front of House and Back of House operations and ensuring they operate in complete alignment. This includes responsibility for service standards, team performance, financial results, and the overall guest journey.  


This is a genuinely hands-on leadership role. You will be present on the floor during service, leading by example, setting expectations, and maintaining a strong operational pace. Your visibility will play a key role in shaping the culture, supporting your management team, and ensuring guests consistently receive a polished, high-quality experience.  


Working closely with the Head Chef and senior leadership team, you will ensure day-to-day operations run smoothly and efficiently. You’ll focus on maintaining strong team engagement, clear communication between departments, and disciplined financial control — balancing exceptional hospitality with commercial performance.  


Key Responsibilities

  • Leading, motivating, and developing FOH and BOH teams

  • Delivering consistently high service standards

  • Driving sales and achieving profit targets

  • Managing full P&L responsibility

  • Overseeing stock control, wet sales, and cash procedures

  • Recruiting, training, and retaining strong team members

  • Maintaining high standards across both dining and rooms

  • Creating a positive, professional team culture


What We Are Looking For

  • Proven experience as a General Manager within a premium hotel or restaurant, fine-dining environment, or quality food-led hospitality business

  • Solid experience managing a venue that includes rooms or boutique hotel accommodation, with a clear understanding of guest expectations across both dining and stay experiences

  • Strong knowledge of hotel operations including reservations, occupancy management, room standards, and overall guest journey

  • A commercially focused operator with proven P&L responsibility and the ability to drive both revenue and profitability

  • Confident leading multi-department teams across restaurant, bar, and rooms

  • High personal standards with a strong eye for detail across service, presentation, and guest satisfaction

  • Calm, decisive, and solutions-focused under pressure
