Bread Hospitality are working with a renowned, award winning hotel in Norwich to find an Executive Head Chef. Our brief is to find an exceptional chef with a proven track record of managing a large kitchen team in a multiple kitchen operation. You will lead an exciting brigade looking to offer a range of unique and fresh menus.
The ideal candidate would have strong background in creating exciting menus ranging from short order bar menus to a 2/3 rosette fine dining brasserie menu using local suppliers and creating their own mouth-watering dishes. You will inherit a great brigade of skilled junior chefs who are looking to develop their own career under a highly skilled head chef’s direction. We are seeking an ambitious individual who has a wide range of culinary skills. You would also be required to show an exceptional financial understanding of kitchen management and GP controls.
The Responsibilities….
You must possess excellent culinary and presentation skills.
Great back-office knowledge when it comes to stock management, recruitment, training and development and other management duties.
Overall responsibility for daily operations in the kitchen
Liaising with purchasing companies for food orders
Maintaining or raising the profit margins on food
Producing exciting and creative menus and new dishes
Managing, training, and recruiting a brigade of chefs
